Gran Cru di Grotta – 18th Century Cave Aged Cheese, Brisighella.
The “Gran Cru di Grotta” cheese is a semi matured Peccorino type cheese which is aged in the restored 18th Century Cave of Villa Corte where it receives a slow and consistent ripening dictated by the microclimate and natural environmental conditions. Like a Champagne, the cheese is monitored in the cave by expert hands and eyes, the distinctive yellow ochre aged rind being due to the noble moulds that thrive undisturbed inside the cave. The cheese is then wrapped in a fine cotton muslin cloth specifically designed for a better preservation. It is cream coloured inside with irregular little holes, a rich texture and is very flavoursome with hints of the noble moulds unique to the cave. Serve with Sangiovese di Romagna or Chianti Classico.
